In 850 AD, it is said an Ethiopian goat herder discovered the wonders of coffee when his flock grew restless and wouldn't go to sleep at night. Curious, he discovered that his flock had been eating the cherries of coffee trees. The region in which this innovator of caffeinated beverages made his discovery is called Yirgacheffe and is located in south-central Ethiopia. The real mystery is how to pronounce its name. Soften the Y at the front, accent the “chef” with a hard ch, as in chief, and end it by emphasizing the letter 'F.' Putting it all together, it sounds something like, “ear-guh-chef”. While a cup brewed from this bean is always sure to have a bold yet slightly sweet flavor, this light roast also preserves a kick strong enough to get anyone ready to face the day.
